Bijora pickle

INGREDIENTS:

    • 5-kilo bijora
    • 1½ kilo brown sugar
    • 1½ kilo salt
    • 1/2 kilo mustard seeds
    • 2 tbsp. Turmeric powder
    • 1-cup sugarcane juice

PREPARATION :

Boil bijora in a pot, till they are fully cooked. Cut them into long pieces. And fill them with salt and keep aside. Next day, remove from the salt water, and dry them in a pot take mustard seeds powder, brown sugar and turmeric powder. Mix bijora with this mixture. Fill them in the glass jar after 24 hours add sugar ½ cane juice. The pickle is ready after 8-10 days.
